Tuscan cuisine is simple and rustic, featuring pheasant (fagiano), hare, wild boar (cinghiale) and pasta flavored with tartufi (truffles). Other specialties are bistecca alla Fiorentina (grilled steak), arista alla Fiorentina (pork with rosemary), Toscani mangiafagiolli (bean stew) and finocchione, a salami flavored with fennel. Tuscany’s Chianti is well-known, but other wines worth trying include Brunello di Montalcino, Rosso di Montalcino and Vino Nobile di Montepulciano. And there’s no better way to end your meal than with biscotti—dipped in a glass of Vin Santo (dessert wine), of course!
