This simple mixture not only gives some of Morocco’s most abundant products a place to shine, but also recalls the country’s history in its French colonial influence. From the peppery arugula to the creamy goat cheese, the light, fresh ingredients make this the ideal bite to dig in to during a summertime trip to Casablanca, Marrakech, and beyond.

For the salad
For the dressing
For this French-influenced salad, spread the red-leaf lettuce and arugula on a medium plate. Then, cut the log of goat cheese into 12 slices, quarter the figs lengthwise, and arrange both ingredients on the top of the salad.
For the dressing, whisk together all ingredients and drizzle over the top of the salad. Finish the plate off with basil ribbons and serve.
